Beer Battered Fish Bites with Tarter Sauce

Coconut Mahi Mahi Nuggets

1 ¼ Lb. Mahi Mahi Fish

1 Egg

1 Cup Almond Flour

2/3 Cup Shredded Coconut

¾ Teaspoon Salt

¾ Teaspoon Pepper

¼ Cup of Rapid Fire MCT Oil

Lemon Wedges and Tartar Sauce (Optional)



Cut Mahi Fish into 1” or 2” pieces and pat dry with paper towel.  Whisk egg in bowl and set aside. Use large plastic container with lid, combine almond flour, shredded coconut, and salt and pepper.  Heat Rapid Fire MCT Oil in skillet over medium heat. Dip Mahi Mahi Fish in the egg and then dip fish into batter combined in large plastic container.   Once fish is dipped and battered, place in heated skillet and cook 2 to 4 minutes on each side. Thinner pieces will cook faster and crust should be a light golden brown.  Transfer to wire rack and repeat with remaining fish. Can be served with lemon wedges and tartar sauce if desired.
